Eliah Halpenny and Dr. Cam Muir produce some of the finest tea in the world.  Their farm's terroir is unmatched.  Big Island Tea sits on a bed of 300 year old volcanic ash surrounded by an 'ohia forest and other native trees that have fed the soil and filled it with nutrients over centuries.  The tea bath in cool, morning mist and are shaded from the afternoon sun by the native trees.  

Each plant is seed-grown promoting genetic diversity and agricultural sustainability.  Natural cross pollenation takes place and no pesticides are used.  The farm is part of this living tropical cloud forest ecosystem.  

A'a Black stands as some of the finest tea in the world.  Smell the ohia forest in the bouquet.  Taste notes of ripe banana, sweet raisins and honey in the cup.  This one-of-a-kind tea is plucked and processed entirely by hand. 

A'a Black sells for $10 a gram in Harrod's of London and is served at distinguished restaurants like Senia, MW and Eleven Madison.

Brewing Technique:
  • Steep: 5 minutes first infusion, 1 minute thereafter
  • Leaf Amount: 5 g per cup
  • Water Temp: 195-205 degrees F (90-96 C)
