When Chefs Chris Kajioka and Anthony Rush approached us to do the tea menu for Restaurant Senia, we wanted something unique to go with their cuisine and the way they approach food.  On a trip to Taiwan, we were introduced to Lin Wang Tea, a small farm in the southern town of Taitung.
 
Taitung sits on the Pacific coast of the island and the weather mimics Hawaii.  Lin Wang Tea is a relatively young farm but they have already won numerous awards.  We spent time with the Wang family to understanding their heart for making fine tea and learn how to make Honey Oolong.  At first sip, we knew this tea was going on the menu at Senia, the first restaurant in the world to serve Honey Oolong. 
 
Pro Tips: 
  • Brew the first infusion for 3-4 minutes, subsequent infusions for 1 minute each.  Completely pouring off all liquid after each infusion.  Pair this tea with anything chocolate.  Pairs with anything chocolate.
